Oriental Mustard Powder

Brassica juncea seeds are cold pressed to extract some of the oil before milling into a fine yellow powder with a slight brown speck. The hot flavor profile of this powder makes it perfect for wasabi and hot condiment mustard.  Oil content of the powder measures about 20% and can contain 1% of the volatile oil that contributes to its unique hot flavor profile.Oriental mustard powder includes the glucosinolate sinigrin, which is the precursor to Allylisothiocyanate.
